Breakfast Quesadillas

A quick and filling breakfast made with eggs, veggies, cheese, and your choice of meat, all sandwiched between crispy tortillas.

Ingredients
  

Main Ingredients
  • 2 large tortillas
  • 4 pieces eggs
  • 1 cup shredded cheese (cheddar or Monterey jack) Can substitute with other preferred cheeses.
  • 4 slices bacon, cooked and chopped
  • 1/2 piece sausage, cooked and crumbled Can use any preferred sausage.
  • 1/2 piece bell pepper, diced
  • 1/4 piece onion, diced
  • to taste none Salt and pepper
  • as needed none Oil or cooking spray for frying

Method
 

Preparation
  1. Cook the diced onion and bell pepper in a skillet until soft.
  2. In a bowl, whisk together eggs, salt, and pepper; pour into the skillet with the veggies.
  3. Scramble until the eggs are fluffy and cooked through.
  4. Remove from heat and stir in the bacon and sausage.
  5. Heat another skillet over medium heat and place one tortilla in it.
  6. Sprinkle half of the cheese on the tortilla, then add the egg mixture, and top with the remaining cheese.
  7. Place the second tortilla on top and cook until golden brown, about 3-4 minutes per side.
  8. Remove from the skillet and cut into wedges. Serve warm.

Notes

Serve with salsa, sour cream, or avocado slices on the side. For a spicy note, serve with hot sauce. Store leftovers wrapped in foil or in an airtight container in the fridge for up to 3 days.
