This recipe makes warm biscuits topped with thick, creamy sausage gravy, perfect for breakfast or a quick dinner.

Ingredients
  

For the Biscuits
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cut into pieces Keep cold for light, flaky biscuits.
  • 3/4 cup milk Replace with buttermilk for extra flavor.
For the Gravy
  • 1 pound sausage (breakfast sausage or your choice) Choose spiced or mild based on preference.
  • 2 tablespoons all-purpose flour For thickening the gravy.
  • 2 cups milk Add slowly to avoid lumps.
  • to taste none Salt and pepper Taste and adjust at the end.

Method
 

Preparation of Biscuits
  1. Preheat the oven to 450°F (230°C).
  2. In a bowl, mix flour, baking powder, and salt.
  3. Cut in butter until mixture resembles coarse crumbs.
  4. Stir in milk until just combined.
  5. Turn dough onto a floured surface, knead gently, then roll out to about 1-inch thick.
  6. Cut out biscuits and place on a baking sheet.
  7. Bake for 10-12 minutes until golden.
Preparation of Gravy
  1. Cook sausage in a skillet over medium heat until browned.
  2. Stir in flour and cook for 1-2 minutes.
  3. Gradually add milk, stirring continuously until thickened.
  4. Season with salt and pepper.
Serving
  1. Serve biscuits smothered in sausage gravy.
  2. Split warm biscuits and pour gravy over them.
  3. Serve with eggs or fried tomatoes, and a side of fruit or a simple green salad.

Notes

Keep in separate airtight containers. Store in the fridge for up to 3 days. Reheat gravy on the stove and warm biscuits in the oven or microwave.
