  • 1 1/2 cups all-purpose flour Can substitute with a gluten-free flour blend.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

  • 1 cup chocolate chips Try using dark chocolate chips for a different flavor profile.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Beat in the mashed bananas, egg, and vanilla until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the chocolate chips.
Baking
  1. Drop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie.
  2. Bake for 10-12 minutes or until the edges are lightly golden.
  3. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve these delicious cookies warm or at room temperature. They pair wonderfully with a glass of milk or coffee. You can dust them with powdered sugar for an extra touch. Store in an airtight container at room temperature for 3-4 days, or freeze for up to 3 months.
