For the salmon
  • 2 pieces 6-ounce salmon fillets Skin on or off, your preference
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream Or full-fat coconut milk for a dairy-free option

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Pat your salmon fillets dry with paper towels to help the seasoning stick.
  3. In a small bowl, whisk together olive oil, lemon juice, dill, parsley, garlic powder, salt, and pepper.
  4. Pour the mixture evenly over the salmon fillets, gently rubbing it into their sides.
Cooking
  1. Place the seasoned salmon fillets skin-side down on the prepared baking sheet.
  2. Bake for 12–15 minutes, or until the salmon flakes easily with a fork.
  3. For a creamy twist, drizzle heavy cream or coconut milk over the salmon during the last 5 minutes of baking.
  4. Let the salmon rest for 2–3 minutes before serving.
