Ingredients
  

Potatoes
  • 4 pieces russet potatoes, scrubbed clean About 8 ounces each
Roasted Broccoli and Bacon
  • 1 pound fresh broccoli, cut into 1-inch pieces
  • 4 ounces bacon, diced (about 4 slices)
  • Olive oil For coating
  • Kosher salt and freshly ground black pepper To taste
To Finish
  • 1 tablespoon butter Generous pat or two
  • 1 cup sharp orange cheddar, coarsely grated
  • sour cream To taste
  • minced fresh chives To taste

Method
 

Bake Potatoes
  1. Preheat your oven to 450°F. Spear each potato several times with a fork to keep it fluffy.
  2. Lightly coat each potato in olive oil (about a teaspoon each) and sprinkle with kosher salt and black pepper.
  3. Bake the potatoes directly on the oven rack for 45 minutes to 1 hour.
Roast Broccoli and Bacon
  1. Toss broccoli with a couple tablespoons of olive oil, salt, and pepper on a baking sheet.
  2. Add diced bacon to the broccoli and mix well.
  3. 15 minutes into the potato baking time, place the broccoli and bacon pan in the oven.
  4. Roast for a total of 25 to 30 minutes, turning occasionally until the bacon is crisp and the broccoli is almost charred.
Serve
  1. Once potatoes are cooked, use a fork to perforate them once or twice down the middle.
  2. Cover hands with a towel or potholder, press the ends to pop the potato open, and fill with toppings: butter, salt, pepper, cheddar, roasted broccoli and bacon, sour cream, chives, and more salt and pepper.
  3. Enjoy immediately.
