Method
Bake Potatoes
- Preheat your oven to 450°F. Spear each potato several times with a fork to keep it fluffy.
- Lightly coat each potato in olive oil (about a teaspoon each) and sprinkle with kosher salt and black pepper.
- Bake the potatoes directly on the oven rack for 45 minutes to 1 hour.
Roast Broccoli and Bacon
- Toss broccoli with a couple tablespoons of olive oil, salt, and pepper on a baking sheet.
- Add diced bacon to the broccoli and mix well.
- 15 minutes into the potato baking time, place the broccoli and bacon pan in the oven.
- Roast for a total of 25 to 30 minutes, turning occasionally until the bacon is crisp and the broccoli is almost charred.
Serve
- Once potatoes are cooked, use a fork to perforate them once or twice down the middle.
- Cover hands with a towel or potholder, press the ends to pop the potato open, and fill with toppings: butter, salt, pepper, cheddar, roasted broccoli and bacon, sour cream, chives, and more salt and pepper.
- Enjoy immediately.
