Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place the chicken breasts in a baking dish.
  3. In a small bowl, mix together the olive oil, lemon juice, lemon pepper seasoning, and salt.
  4. Pour the mixture over the chicken breasts, ensuring they are evenly coated.
Cooking
  1. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and has an internal temperature of 165°F (75°C).
  2. Garnish with fresh parsley before serving.

Notes

Pound the chicken breasts to even thickness for even cooking. Pat the chicken dry before coating so the seasoning sticks. Use a meat thermometer to check for 165°F (75°C). Let the chicken rest for 5 minutes after baking to keep it juicy. Taste and add more lemon juice or salt if needed. For variations, you can add garlic powder or minced garlic for more flavor, use chicken thighs instead of breasts, sprinkle grated Parmesan on top in the last 5 minutes of baking, or add sliced lemons for a brighter citrus note.
