  • 1 tablespoon olive oil

  • 1 teaspoon onion powder

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, combine Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  3. Pat the chicken thighs dry with a paper towel and place them in a baking dish.
  4. Rub the olive oil over the thighs, then sprinkle the spice mixture evenly on both sides.
  5. Arrange the chicken thighs skin-side up in the baking dish.
Cooking
  1. Bake for 35-40 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy.
  2. Let rest for 5 minutes before serving.

Notes

Let chicken rest 5 minutes after baking to lock in juices. Use a meat thermometer to avoid overcooking. Spread the thighs so air can circulate around them in the pan.
