  • 2 cups beef broth Use low-sodium for less salt.
  • 1 cup cooked bacon, chopped
  • 1 cup shredded cheddar cheese Substitute with pepper jack for spice.
  • 1 cup rice Use long-grain or instant rice.
  • 1 pound ground beef Feel free to use ground turkey for a lighter option.
  • 1 medium onion, diced
  • Salt and pepper to taste Adjust according to taste; bacon and broth are salty.

Method
 

Preparation
  1. In a large skillet, cook the ground beef with the diced onion over medium heat until browned. Drain any excess fat.
Cooking
  1. Add the beef broth and bring to a simmer.
  2. Stir in the rice and cover. Cook until the rice is tender and has absorbed most of the broth.
  3. Mix in the cooked bacon and shredded cheese, stirring until the cheese is melted.
  4. Season with salt and pepper to taste.
Serving
  1. Serve hot, topped with optional toppings if desired.

Notes

Cool the skillet to room temperature after serving. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet or microwave. Adjust cooking time based on the type of rice used.
