  • 2 lb lean ground beef
  • 6 strips bacon, cut into pieces You can use cooked or raw bacon.
  • 1 cup dill pickle relish, drained
  • 3/4 cup crispy fried onions
  • 2 large eggs
  • 3/4 cup panko bread crumbs Panko gives a lighter texture.
  • 1 cup shredded cheddar cheese Add more cheese if desired.
  • 1/4 cup ketchup
  • 1/4 cup brown sugar For glaze.
  • 1 tablespoon Worcestershire sauce For glaze.
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, bacon, dill pickle relish, crispy fried onions, eggs, and panko bread crumbs.
  3. Season with salt and pepper to taste and mix well until fully combined.
  4. Shape the mixture into a loaf and place it in a baking dish.
Glaze Preparation
  1. In a separate small bowl, mix together the ketchup, brown sugar, and Worcestershire sauce to create the glaze.
  2. Spread the glaze over the meatloaf.
Baking
  1. Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).
  2. Remove from the oven and let it rest for a few minutes before slicing.

Notes

Cool the loaf to room temperature before storing. Wrap in foil or place in an airtight container and store in the fridge for up to 4 days. For longer storage, freeze slices in a sealed container or freezer bag for up to 3 months. Thaw in the fridge overnight before reheating.
