Ingredients
  

Muffin Batter
  • 2 cups all-purpose flour Measure by spooning into the cup and leveling it off.
  • 1 cup apple cider Use fresh cider for the best flavor.
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted Warm slightly if needed to mix smoothly.
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
Cinnamon Sugar Coating
  • 1/2 cup brown sugar For rolling the muffins.
  • 2 tablespoons cinnamon For rolling the muffins.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the melted butter, sugar, eggs, and apple cider until smooth.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
Baking
  1. Bake for 18-20 minutes or until a toothpick comes out clean.
  2. While the muffins are baking, mix the brown sugar and cinnamon for the topping.
  3. Once ready, allow muffins to cool slightly, then roll them in the cinnamon sugar mixture.
Serving
  1. Serve warm and enjoy your delicious apple cider muffins!

Notes

Do not overmix the batter; stir until just combined for soft muffins. These muffins pair well with plain butter, cream cheese, or a light drizzle of glaze.
