Air Fryer Apple Hand Pies

These warm, flaky hand pies are filled with a sweet apple and cinnamon filling, cooked quickly and healthily in the air fryer.

Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and diced Keep butter cold for a flakier crust.
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 6-8 tablespoons cold water Add a tablespoon at a time until mixture forms a ball.
Filling
  • 2 cups apples, peeled and diced
  • 1 teaspoon cinnamon
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash) Brush on tops for nice color.

Method
 

Preparation of Dough
  1. In a bowl, mix flour, sugar, and salt.
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Stir in water, a tablespoon at a time, until mixture forms a ball.
  4. Shape into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
Preparation of Filling
  1. In another bowl, combine diced apples, cinnamon, sugar, and lemon juice.
Assembly
  1. Roll out dough and cut into circles.
  2. Place apple filling on one side of each circle, fold over, and seal edges with a fork.
Cooking
  1. Preheat air fryer to 375°F (190°C). Brush the tops of the hand pies with beaten egg.
  2. Air fry for 12-15 minutes or until golden brown.
  3. Allow to cool slightly before serving.

Notes

Serve warm with powdered sugar or vanilla ice cream. Store in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 350°F (175°C) for 3-5 minutes to crisp the crust. Add a pinch of nutmeg or mix in chopped nuts or raisins to the filling for variations.
