Method
Preparation of Dough
- In a bowl, mix flour, sugar, and salt.
- Cut in butter until mixture resembles coarse crumbs.
- Stir in water, a tablespoon at a time, until mixture forms a ball.
- Shape into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
Preparation of Filling
- In another bowl, combine diced apples, cinnamon, sugar, and lemon juice.
Assembly
- Roll out dough and cut into circles.
- Place apple filling on one side of each circle, fold over, and seal edges with a fork.
Cooking
- Preheat air fryer to 375°F (190°C). Brush the tops of the hand pies with beaten egg.
- Air fry for 12-15 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
Serve warm with powdered sugar or vanilla ice cream. Store in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 350°F (175°C) for 3-5 minutes to crisp the crust. Add a pinch of nutmeg or mix in chopped nuts or raisins to the filling for variations.
