Ingredients
  

Apple Filling
  • 2 cups diced apples Use any variety of apples
  • 1/2 cup sugar Can substitute with brown sugar
  • 1 teaspoon cinnamon Add nutmeg or allspice for variation
  • 1 tablespoon lemon juice Fresh lemon juice preferred
Crust and Topping
  • 1 package refrigerated pie crusts Keep crust cold for flakiness
  • 1 large egg for egg wash
  • 1 tablespoon butter melted for brushing on top

Method
 

Preparation
  1. Preheat air fryer to 350°F (175°C).
  2. In a bowl, mix diced apples, sugar, cinnamon, and lemon juice until well combined.
  3. Roll out pie crusts on a lightly floured surface and cut into circles.
  4. Place a spoonful of the apple mixture in the center of each circle.
  5. Fold the circle over and seal the edges with a fork.
Cooking
  1. Brush the tops with egg wash and lightly cut slits for steam to escape.
  2. Arrange the pies in the air fryer basket and cook for 10-12 minutes or until golden brown.
  3. Brush with melted butter before serving.

Notes

Serve warm with vanilla ice cream or a dusting of powdered sugar. These hand pies store well and are great for picnics. Do not overfill pies to prevent leakage.
